Tsubaya Swedish Steel Sujihiki 240mm



Tsubaya cutlery in Tokyo is one of the favorite destinations among Chefs and cutlery enthusiasts, producing knives since 1952, and working with the biggest Blacksmiths in Japan. This line of Tsubaya knives is forged from Swedish steel by Teruyasu Fujiwara, a descendant of one of the ancient families of Katane producers. This extraordinary series of knives is still forged today in Seki in the prefecture of Gifu, and worked entirely with Swedish stainless steel to guarantee exceptional and lasting performance, reducing the oxidation problems of traditional Japanese knives with high carbon content, and finished with a sturdy riveted European-style handle.
