Kanehide Bessaku Sujihiki 270mm

This Kanehide Bessaku Sujihiki measures 270mm to the blade and is mainly used as a knife for filleting/scalloping in Japanese professional kitchens. The knife is forged in the town of Seki and is flat on the back and convex on the right side, so it is designed primarily for right-handed. The knives are made of stainless steel very similar to the steel used in the Kikuichi TKC. The hardness of the blade is 60 HRC and arrive very sharp straight out of the box.
GOOD TO KNOW:
– Wash the knife by hand and dry it with a dry cloth.
– Do not cut frozen foods.
– Use preferably sharpening stones to sharpen your knife.
